Phase II is a controlled treatment of the compost with more than one objective. The pasteurisation stage and subsequent conditioning have different purposes. Completing a heating stage is therefore not, by itself, permission to add spawn. The process must also produce a suitable, conditioned material and bring it to the appropriate spawning condition.
Uniform loading and airflow matter because the air display and the coldest or warmest material location can differ. A time-and-temperature record should identify its measurement points. Record interruptions and corrective action instead of concealing gaps in the chart. Tunnel and steam-system operation needs a trained operator and a process suitable for the actual load and equipment.
