DMR records that Indian local markets use retail packs of 200 g or 400 g in thin polythene. For longer holding, the manual gives an optimum storage atmosphere of 2.5 to 5 per cent carbon dioxide with 5 to 10 per cent oxygen, and says that in pack humidity of 87 to 90 per cent gives the best colour.
