Post-Harvest

Practical workbook

Time your own cold chain

Record: Crate number, time out of room, pulp temperature, time to cooling, weight lost.

  1. Note the clock time each crate leaves the room.

  2. Measure the temperature of a mushroom in the middle of the crate.

  3. Record how long it takes to reach the cooling point.

  4. Weigh one marked crate at despatch and again at the buyer.

  5. Repeat in a cool month and a warm month and compare.
