Buy a long-stem compost thermometer before anything else. ICAR-DMR says the heap may reach 70 °C in 24 to 48 hours, and that above 80 °C in the core is undesirable because the heap goes anaerobic. A peak stuck near 55 °C says nitrogen is short.
Measure centre, mid-depth and near-surface each morning. One centre reading hides a cold shoulder, and cold shoulders are where competitor moulds start. A sour, black, greasy heap went anaerobic. Insects breed at the last turnings, and current label approval must be checked before using anything against them.
