State whether the project buys Phase II compost, buys colonised Phase III compost or operates its own compost system. Identify which stages occur in which rooms. This determines the handling, incubation, casing, utilities and staffing that remain within your project. A quoted tonnes-per-day figure has little meaning until its product, quality basis and averaging period are defined.
Work backwards from a credible sales plan. List buyers, accepted grades, dispatch frequency and payment terms. Distinguish average sales from peak harvesting days: harvest arrives in a biological pattern, while a buyer may want a steady delivery. Packing, cooling and transport must handle the actual peaks or the crop plan must change.
